Irish Onion Soup

Ingredients

  • 1 red onion, sliced from root to tip into 1/8” thick slices
  • 1 garlic clove, chopped
  • 2oz of dry Sherry
  • Fresh thyme to taste, chopped
  • 2 tbsp fresh chives, chopped
  • 2 cups of beef stock per person
  • Butter
  • Sourdough baguette, ¼“ thick slices
  • Gruyere cheese, sliced
  • Guinness™ Cheddar, sliced
  • Chives and/or scallions very thinly sliced, to serve
  • Salt & cracked black pepper

 

 

Instructions

1. Sauté the sliced onion and chopped garlic slowly until golden
2. Add the dry Sherry, chopped fresh thyme and beef stock
3. Simmer for at least 30 minutes
4. In a separate pan, melt the butter, add the sliced sourdough baguette and cook until slightly browned on both sides
5. Pour everything into an ovenproof dish (one per person) and cover the top with Gruyere cheese and Guinness™ Cheddar
6. Place under the broiler(grill) until the cheese is light brown
7. Top with chives and/or scallions
8. Season to taste and enjoy!
