German Nut Cake

Ingredients

  • 250g butter
  • 200g castor sugar
  • Pinch of salt
  • 5 eggs
  • 2 tbsp almond extract
  • 3 tbsp brandy
  • 250g plain flour
  • 3 tsp baking powder
  • 200g ground hazelnuts
  • 50g ground almonds
  • 200g dark chocolate

Instructions

  1. Place butter in a bowl and beat until soft.
  2. Beat in the sugar and slat until light and creamy.
  3. Separate the eggs and keep whites to one side. Slowly add the yolks to the butter mix a little ate time beating until creamy.
  4. Next slowly add the almond extract and brandy.
  5. Beat the egg whites until light and fluffy and then add to the bowl onto of the butter mixture.
  6. Sift the flour and baking powder over the egg whites along with the ground nuts.
  7. Now fold all together until evenly mixed.
  8. Place the cake mix into a loaf tin and bake at 180C (350F) on the middle shelf for around an hour. Test the cake is cooked with a skewer to see if it comes out clean when pricked.
  9. Once cook let cool and transfer onto a cooling rack.
  10. Melt the chocolate and drizzle over the cake, finish with icing sugar and chopped nuts. Serve with a spoonful of clotted cream with brandy.
