Coastal Cheddar

Coastal Cheddar is matured for 15-18 months in the salty sea air of the Jurassic Coast. A rich, rugged and mature cheddar, it is often characterised with a distinctive crunch, a result of the calcium lactate crystals which form naturally as the cheese matures. This maturation process bestows it with its rich and intense flavour but the culture used also adds a contrasting subtle, sweet, top note.
