England invented Cheddar in the 15th Century in the area of Cheddar Gorge in Somerset. It was a favourite of Queen Elizabeth 1st and one of the gastronomic delights of court life, often in short supply, and as one courtier put it cheddars are “bespoken before they are made”.
The recipe was later taken to the USA, Canada, New Zealand, Australia and anywhere that the English emigrated to. Even Ben Gunn, a pirate in Robert Louis Stevensons Treasure Island used to dream of “cheddar cheese-toaster mostly”.

Has an intensity and complexity of flavour that comes from the cloth wrapped traditional cheese that mature on wooden shelves as it matures, forming the old fashoned rind is the hallmark of a well-matured traditional Cheddar.
A well-flavoured mature cheddar 12 – 15 months in age is specially selected to be naturally smoked for 3 – 4 hours over oak shavings and sawdust. No artificial flavourings are added.
Aged for a minimum of 2 years this Cheddar is a firm bodied cheese with an even pale yellow colour and a clean full taste.
Using the skills and dedication of our cheese makers we have successfully developed a hard goats cheese in the same style as our traditional cheddar.
Using locally produced goats milk, the truckles weigh approximately 24Kg. These can be cut into 1/16(1.5Kg ) sections, which is ideal for the deli counter or the catering trade. Balancing the goat’s milk with the flavour of real cheddar works perfectly together and the cheese is sold at up to 12 months old. This product is made using vegetarian rennet.
