Ingredients
- Sirloin or Tenderloin/New York strip for 4
- 1/2 tsp white crushed peppercorns
- 2 tsp green peppercorns
- 1/2 cup Devon Cream
- 1 tbsp brandy
- 1 tbsp brown sugar
- 1 tbsp flour
- 1 tbsp Black Pepper (freshly ground)
- Pinch salt
Method
Steak
- Press black peppers into both sides of the steak
- Fry both sides until crisp, remove from pan
Sauce
- Add butter to steak pan and melt
- Add flour and brown sugar and stir
- Add brandy and simmer for one minute
- Reduce heat and stir in Devon Cream until smooth
- Add salt to taste
Serve sauce over steak or separately.
