Ingredients
- 1 lb./500g Cooked Potatoes, cut into chunks
- 4 oz./125g Streaky Bacon, cut into small pieces
- 1 Small Onion, chopped (optional)
- 4 oz./125g Carrigaline Garlic & Herb Cheese
- Olive Oil, Salt and Pepper
Method
- Fry the potato chunks, bacon pieces and onion with some olive oil. Season with salt and pepper.
- Sprinkle with grated or diced Carrigaline Cheese.
- Place under a hot grill until the cheese is melted and bubbling.
