Bacon Potatoes and Carrigaline Cheese

Serves 2

Ingredients

  1. 1 lb./500g Cooked Potatoes, cut into chunks
  2. 4 oz./125g Streaky Bacon, cut into small pieces
  3. 1 Small Onion, chopped (optional)
  4. 4 oz./125g Carrigaline Garlic & Herb Cheese
  5. Olive Oil, Salt and Pepper

Method

  1. Fry the potato chunks, bacon pieces and onion with some olive oil. Season with salt and pepper.
  2. Sprinkle with grated or diced Carrigaline Cheese.
  3. Place under a hot grill until the cheese is melted and bubbling.
