Cranberry and Orange Salad

Ingredients

  • 4 large juicy oranges
  • 12 black grapes
  • 225g/8oz creamy white stilton with cranberries cut into chunks
  • Assortment of baby salad leaves
  • Dressing
  • 1 tablespoon of white wine vinegar
  • 1 tablespoon of white port
  • 3 tablespoons of olive oil
  • 1 heaped teaspoon of caster sugar
  • The rind of 1 orange, grated

Method

  1. Peel and slice the oranges.
  2. Arrange orange slices on four plates
  3. Scatter over the cheese, salad leaves and grapes.
  4. Place all the dressing ingredients into a screw top jar and shake vigorously until all ingredients are well mixed. Drizzle over the salad.
  5. Serve immediately.
