Berkswell Cheese Potatoes

Ingredients

  • 500g potatoes, scrubbed, leaving skin on, diced into cubes
  • 100g Berkswell Cheese
  • Oil of choice e.g. olive oil

Method

  1. Place potatoes in salted water and bring to the boil, Cook for about 5 minutes.
  2. Meanwhile heat oil in shallow pan in hot oven.
  3. When potatoes have cooked for about 3 minutes drain and place into the hot oil spooning oil over the potatoes.
  4. Grate Berkswell Cheese over potato and replace into hot oven until golden brown.

These are particularly good served with cold meat or fish.
