Ingredients
- 500g potatoes, scrubbed, leaving skin on, diced into cubes
- 100g Berkswell Cheese
- Oil of choice e.g. olive oil
Method
- Place potatoes in salted water and bring to the boil, Cook for about 5 minutes.
- Meanwhile heat oil in shallow pan in hot oven.
- When potatoes have cooked for about 3 minutes drain and place into the hot oil spooning oil over the potatoes.
- Grate Berkswell Cheese over potato and replace into hot oven until golden brown.
These are particularly good served with cold meat or fish.
