Blueberry Chicken
Ingredients
- 2 boneless chicken breasts, skins on
- 2 dessert spoons, Creamy White Stilton with Blueberries, crumbled
- 2 dessert spoons full fat cream cheese
- 2 tablespoons orange juice
- 1 tablespoon olive oil
- 2 heaped tablespoons course grain mustard
- Salt & pepper to taste
Method
- Mix together Creamy White Stilton with Blueberries, full fat cream cheese and freshly milled black pepper
- Partially loosen the skin on each breast to form a pocket and carefully spoon the mixture in. Place in a baking dish
- Mix together the oil, mustard and juice. Spread over the chicken and bake at 180°C, 350°F, gas mark 4 for 30-35 minutes
