Blueberry Chicken

Ingredients

  • 2 boneless chicken breasts, skins on
  • 2 dessert spoons, Creamy White Stilton with Blueberries, crumbled
  • 2 dessert spoons full fat cream cheese
  • 2 tablespoons orange juice
  • 1 tablespoon olive oil
  • 2 heaped tablespoons course grain mustard
  • Salt & pepper to taste

Method

  1. Mix together Creamy White Stilton with Blueberries, full fat cream cheese and freshly milled black pepper
  2. Partially loosen the skin on each breast to form a pocket and carefully spoon the mixture in. Place in a baking dish
  3. Mix together the oil, mustard and juice. Spread over the chicken and bake at 180°C, 350°F, gas mark 4 for 30-35 minutes
